Wash the cauliflower and cut into small forests. Place in the food processor and chop to a riced texture. Alternatively, purchase prepackaged organic cauliflower rice (available at Costco from Taylor Farms).
Warm butter or oil in a large skillet over medium heat.
Stir in cauliflower and sprinkle with salt.
Cook for 5-7 minutes, stirring occasionally until the cauliflower is tender.
Pull the rosemary leaves off the stem and mix into the riced cauliflower.
