Instructions
  1. Preheat the oven to 425 degrees F.
  2. Rinse and pat dry the chicken and place in a roasting pan.
  3. Salt liberally inside and out.
  4. Place thyme branches on top and inside the chicken.
  5. Arrange cut carrots around chicken and inside.

  6. Dot the chicken with 2 tbsp. butter.

  7. Bake at 425 degrees for 1 hour.
  8. Take out the chicken and baste with juices.
  9. Spread the remaining butter on the chicken and cover with parchment paper and aluminum foil.
  10. Return to the oven for an additional 20-30 min.
  11. Carve and serve.
